It will work great. This is the Pro-Series probe that we recommend for brewing. Just make sure that you don't submerge the probe's transition and cable.
Yes, you may insert this into the turkey while it is deep frying. You will want to make sure that the transition (the handle where the probe meets the cable) is kept out of the hot oil.
No, this probe cannot be bent. But the cable is malleable enough to move out of the way, so it doesn't get caught on anything.

Yes, it is. It is very small and located at the very tip of the probe.
No, there isn't Pro-Series probe with a shorter cable available. The probes have been designed to give you plenty of room to put ChefAlarm thermometer/alarm on the countertop or on another surface away from the heat of your smoker. You do not want to have the thermometer close to the heat. You could use twist ties for the probe cables, as long as you take care not to pinch or kink them.

The majority of the probe is 0.13 inches in diameter, and then it reduces to 0.08 inches for the last inch or so.
These probes are made out of stainless steel, so you are able to use this probe involving lye for soap making.
