An IR thermometer will only give accurate data on tire temperatures if it can be used while the car is in motion because the tire surface cools rapidly when the car has stopped. It could probably still tell you if there is a difference in temperature across the tire tread, but a probe type thermometer with a fine tip and a rapid response is what the pros use.

The main difference between the IR-GUN-S and the IRK-2 IR guns is that IRK-2 has an external probe plug that is compatible with our Type-K probes and is a little more accurate than our IR-GUN-S. Both of these have the same optics ratio of 12:1, and have a range up to 1022°F.

An infrared gun (such as the IR-GUN-S) will only measure the surface temperature of the oil. In order to know what the internal temperature of a vat of fry oil is, you will either need to keep the oil stirred so the oil is the same temperature throughout (hard) or use a probe thermometer to measure the internal temperature (easier).

You can, but you need to keep in mind that an infrared gun only measures surface temperatures. If you put the food in a bowl and used the infrared gun, you would get the surface temperature of the freeze dried food at the top of the bowel. However, if you laid the freeze dried food out on a tray, you would end up getting the temperature of the tray, because the infrared takes the temperatures of an entire circle. This particular infrared gun takes the temperature of a 1 inch circle when you hold it 12 inches away from the area you are measuring.
