Thermapen One
I use it for sourdough bread baking and I have to keep track of my dough temperature while it is fermenting. So fast at providing a temperature reading - I love it!!

Like the temperature reading, I'm an 'instant' fan.
Expensive, but worth it. I have a T*****r, and I value the accuracy and super quick result that minimizes how much time the grill lid is up when checking temps (on several burgers, for example). I also appreciate the simple on/off functionality and the readout that rotates to always be easily read. This instrument is in a class of its own, with quality well above the lookalike probe I purchased first. Had I known how much difference there is, I could have saved $20-- and some meat from being overdone.

What are the differences between the "classic" and the "ONE" thermapens?
Thermapen ONE is better than a Classic Thermapen is in many significant ways, the most important being its ability to read temperatures 3 times faster and 30% more accurately than a Classic Thermapen does.
Thermapen ONE was redesigned so it's more comfortable to hold, the battery compartment is much easier to access, and the settings are easier to change. We have such confidence in Thermapen ONE's durability that we have increased its warranty period to 5 years versus Classic Thermapen's 2 years.
Other important Thermapen ONE advantages include:
• If its probe is open, a Thermapen ONE's display automatically wakes up whenever you touch it. When a Classic Thermapen goes to sleep, you must close its probe and reopen it to turn it back on.
• A Thermapen ONE uses 1-AAA battery; a Classic Thermapen uses 2-CR2032 batteries.
• A Thermapen ONE's display automatically rotates so you can read it from any direction; a Classic Thermapen's display does not rotate.

Is this the best thermometer for candy making, syrups and chocolates?
My husband bought this thermometer a few years back for meats/grilling and smoking. We're getting one for each of our 4 kids for Christmas next year....my yearly candy making for the holidays; near perfection! Peanut brittle, caramels, toffee....no more guess work. Highly recommend -spend the money.
would ideally like one for all purposes if that's possible. When deep frying need constant check of temp. would really like it to clip on or something instead of having to hold it all the time. what do you recommend?
The Thermapen ONE is excellent for taking fast temperature readings, but for monitoring your frying oil temperature, we recommended using a leave-in probe thermometer, like the ChefAlarm, Smoke or any of our other alarm thermometers. A leave-in probe thermometer would be a separate unit, but it would prevent leaving the body of an instant-read thermometer close to a heat source over an extended period. Can the Thermapen ONE be used for bread baking as well as meat?
Yes, it sure can!
How far should the Thermapen be inserted into meat?
Because the sensor is on the very tip of the probe, you only need to insert the probe to the thermal center (the coolest area) of the meat.

does the Thermapen ONE work well with rechargeable (NiMH) batteries which typically provide 1.3V, or does it require the 1.5V supplied by a disposable battery?
Im using a NiMH battery and its working just fine, but I've just ordered a set of Lithium AAA batteries which are 1.5v, just like Alkaline batts BUT will last a lot longer than Alkaline and Lithium will not corrode and leak like Alkaline batteries will. It's a Win, win.

What is the diameter of the probe?
The Thermapen's probe diameter (both models) is 3.30 mm and reduces to 1.8 mm at the tip.
How does the ONE do while checking temp on a brisket?
Because it is an instant-read thermometer, the Thermapen ONE is great for spot-checking the temperatures of meat, including brisket, particularly at the end of the cook. If you want to continuously monitor temperatures during the entire cook, we would recommend a leave-in alarm thermometer such as DOT, Smoke, Signals, Smoke X, ChefAlarm, or ThermaQ 2.
